Who likes ‘crabby’ people? (Not me). Now, who likes ‘crabby’ food (*raises a hand to touch the roof)? I did say crabby food, not crappy food, and this dish is FAR from crappy.
This is the first time I’ve used rice paper wraps as actual wraps vs just frying them crispy to use as a ‘chip’ or a crunch in a salad. I have to say that I’m most definitely making this recipe again, and I wanted to share it all with you.
Why Crab?
One of my favorite shellfish to cook is Crab. Not only is it so tasty, crab has these health benefits:
- Has similar nutrients as other seafood, but is much lower in mercury content.
- Low in calories but high in protein
- Is loaded with vitamins and minerals such as folate, b-12, iron, niacin, selenium, zinc
- Is a great go-to protein for building and maintaining muscle
- Is loaded with Omega-3s which can be beneficial for good heart health
How Do I Make It?
Ingredients:
- 1 Crab
- 2 Rice Paper Wraps. (I like these, but any brand should suffice)
- Bowl of filtered water (this is just to dip the rice paper wrap in before stuffing)
- 1/3 cup avocado oil
- 1/4 an avocado – sliced
- Cucumber slices – peeled and de-seeded
- Spicy Sauce of your choice
- Cooked rice of your choice (I prefer Jasmine Rice, but you can use any white rice)
Directions:
Prep:
Cook the crab and take out all of the crab meat. This recipe uses Dungeness crabs, but king crab legs can be used.
Cook rice to use in the wraps.
Slice the avocado into thin slices (not cubes).
Slice the cucumber into thin slices and remove the skin and seeds.
Cook:
- Dip the rice paper wrapper in water and lay it on a clean plate.
- Layer the rice, crab, spicy sauce, cucumber, and avocado; and then pack it as tightly as possible.
- Gently wrap, folding bottom to top, right side inwards, left side inwards, then the top over. (View this reel to see it in motion)
- Heat the avocado oil in a pan on high heat (leave it heating for about 3 minutes
- Place the rolled wrap into the oil, turning it on all sides until crispy
- Take out and enjoy!
