Pumpkin everything is in season, so I wanted to share with you a super simple way to make the pumpkin puree that you can use plain, or as a part of the filling for those pumpkin desserts!
What do you need
* 1 small pumpkin
* Pinch Himalayan Sea Salt
* 2 TBSP Avocado Oil
Slice the pumpkin in half and scoop out the seeds. Lay it on a lined baking sheet shell faced down. Spread the avocado oil all over the inside of the pumpkin (don’t forget the edges) until it’s lightly coated. Sprinkle Himalayan Sea Salt. Bake at 400 Degrees for 35 minutes.
Once it has completed, scoop out the pumpkin (if it doesn’t easily scoop, then put it in the oven for an additional 5-10 minutes).
Place all of the pumpkin you scooped into a blender and puree till smooth.
